Fresh Salsa
Ingredients:

  • 1-15 oz can black beans (drained and rinsed)
  • 1-15 oz can corn (drained and rinsed)
  • 2 – 3 medium sized tomatoes (diced)
  • 1/2 medium onion (diced)
  • 2 – 3 jalapeno peppers (chopped)
  • 3 T lime juice
  • 3 t fresh cilantro
  • 1/8 t cumin
Directions: 

Mix all of the above ingredients together.  Chill in refrigerator in a non-metallic airtight bowl for one – two hours before serving.  Serve with tortilla chips or corn chips.

NOTE: For a spicier salsa leave jalapeno seeds in or remove seeds for milder version.

Italian Pork Chop
Ingredients:

  • 4 – 5 Pork Chops
  • 4 – 5 T Italian Dressing
  • 4 – 5 T Flour
  • 1/2 t salt
  • 1/4 t pepper
  • 1/4 to 1/2 C canola oil
  • 1 – 15oz can or jar of spaghetti sauce
  • 5 slices Swiss cheese
Directions:  Preheat oven to 350 degMarinate pork chops in Italian dressing for 60 – 90 minute before cooking.

Mix flour, salt and pepper and drench pork chops in mixture.  In large skillet, cook pork chops on medium high heat thoroughly in canola oil (about 5 – 6 minutes per side).  Once done, take pork chops out of the skillet and place in a baking dish.  Place 4 – 5 tablespoons of spaghetti sauce on each pork chop. Bake for 20 minutes.

Remove pork chops from the oven.  Place one slice of cheese on each chop.  Return to oven about 2 – 3 minutes or until cheese melts.  Remove from oven and serve.

Meatballs Waikiki
Ingredients:

  • 1-1/2 lb ground beef
  • 2/3 C cracker crumbs
  • 1/3 C minced onion
  • 1 egg
  • 1-1/2 t salt
  • 1/4 t ginger
  • 1/4 C milk
  • 1 green bell pepper, sliced
  • 3 t butter
  • 2 T cornstarch
  • 1/2 C brown sugar
  • 1 C pineapple juice
  • 1/3 C vinegar
  • 3 t soy sauce
  • 1 can pineapple chunks
Directions:  Mix beef, crumbs, onion, egg, salt, ginger, and milk thoroughly.  Shape mixture by rounding tablespoonfuls into balls.  Melt butter in large skillet; brown and cook meatballs.  Remove meatballs and keep warm. Pour fat from skillet.

Mix cornstarch and brown sugar.  Stir in pineapple juice, vinegar, and soy sauce until smooth.  Pour into skillet; cook over medium heat, stirring constantly unti mixture thickens and boils.  Boil and stir one minute. Add meatballs, pineapple, and bell pepper and heat through.  Serves 6
