Italian Sausage Soup
Ingredients:

  • 1 1/2 lbs. Italian sausage broken
  • 2 cloves garlic, minced
  • 2 onions, chopped
  • 2 1-lb. cans Italian tomatoes
  • 1 1/2 c. dry red wine
  • 5 c. beef broth
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 3 Tbsp chopped fresh parsley
  • 1 medium green pepper seeded and chopped
  • 2 medium zucchini, sliced 1/4″ thick
  • 1 c. spinach pasta noodles
  • 1 c. pasta noodles
  • 1/2 c. grated Parmesan cheese
Directions:In a heave stockpot, cook sausage until brown. Drain, reserve fat from the pot. Measure 3 Tbsp. fat back into pot, add garlic and onions.  Saute until clear.  Add tomatoes; stir to break apart. Add wine, broth, basil, and oregano; simmer uncovered for 30 minutes. Skim excess fat from the top of soup.  Add parsley, green pepper, zucchini, noodles, salt, pepper and reserved sausage.  Simmer uncovered for 25 minutes.  Serve in deep bowls. Sprinkle with Parmesan cheese.  Allow the flavor of this hearty soup to deepen by preparing it the day before, saving the final 25 minutes of simmering until just prior to serving.  With a green salad and crusty bread, this makes a hearty meal.
