How to Roast Bell Peppers – August Recipe Post Card- The Marr Team

Ingredients

  • Bell Peppers
  • Olive Oil

Directions

  1. Remove any stickers, clean bell peppers and dry.  Preheat oven to 450 degrees.  Coat each side of the pepper with olive oil, place peppers on foil covered cookie sheet and drizzle with additional olive oil.
  2. Place cookie sheet in preheated oven
  3. Watch the peppers and flip every 10-15 minutes in order to make sure each side is evenly roasted. (approximately 30-40 minutes)
  4. Remove from oven and place in large covered bowl, let set for approximately 15-20 minutes.
  5. Once peppers have cooled you should easily be able to peel away the skin.
  6. Cut the pepper in half and clean the seeds, rinse in cool water and dry

Parmesan Crusted Chicken – July Recipe Post Card- The Marr Team

Ingredients

  • 1/2 teaspoon salt
  • 1-1 1/2 cups shredded Asiago cheese
  • 3-4 slices of bacon – cooked and crumbled
  • 1 egg beaten
  • 1 tablespoon water
  • oil for frying
  • 4 boneless skinless chicken breast
  • 1 cup grated parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper

Directions

Preheat oven to 350 degrees

In a small bowl, mix egg and water. In another small bowl, mix parmesan, salt, pepper, and garlic.  Meanwhile, heat oil in frying pan over high heat.  Dip each chicken breast first in egg mixture, then in cheese.  Fry in oil until crust is golden brown, turn and repeat.  Repeat for other side.  Remove chicken from pan and place on a foil lined baking sheet.  You can use wire rack to keep the chicken crispy!  Place pan on center oven rack and bake for 20 minutes, or until the juices run clear.  remove pan from oven, set heat to broil.  Top chicken breast with asiago cheese and bacon and place back in oven under broiler until cheese is melted.
