Spicy Hummus
Ingredients:

  • 1 16-oz can chickpeas
  • 3 garlic cloves, minced
  • 1/4 c. water
  • 1/4 c. lemon juice
  • 1 T. chopped parsley
  • 1 T. olive oil
  • 1/2 t. ground cumin
  • 1/4 t. salt
  • 1/4 t. ground red pepper
  • 1/4 t. paprika
  • wheat pita bread
Directions:   Rinse and drain chickpeas. Process in a food processor until smooth.  Add remaining ingredients. Blend well.  Chill for at least 2 hours before serving with grilled wheat pita bread.. June 2013 Postcard.

Chilled Rice Salad
Ingredients:

  • 3 c. instant rice
  • 2 small cans of black olives, sliced
  • 1 pint grape grape tomatoes
  • 1 lb. mozzarella cheese, cubed
  • 1/4 c. minced cilantro
  • 1/4 c. minced parsley
  • 1/2 c. olive oil
  • 1/2 c. red wine vinegar
  • splash of lemon juice
  • salt and pepper to taste
  • 1 small red onion, chopped (optional)
Directions:  Cook rice as directed.  Add remaining ingredients and mix well.  Serve Chilled. June 2013 Postcard

Sugar Cookies
Ingredients:

  • 1/2 stick butter
  • 1 med onion
  • 6 c. water
  • 1/8 t. garlic powder
  • 1 lb. processed cheese cubed
  • 6 t. chicken bouillon powder
  • 4 c. dried noodles
  • 2 10 oz pkgs chopped broccoli
  • 3-1/2 c. half and half

 

Directions:  Saute onions in butter.  Add water, garlic powder, chicken bouillon and noodles.  Cook until noodles are done.  Cook broccoli separately until done.  Add cooked broccoli to noodles.  Add Cheese and half and half. Simmer until cheese is melted.

Sugar Cookies
Ingredients:

  • 1-1/2 c. powdered sugar
  • 1 c. butter
  • 1 egg
  • 1/2 t. vanilla
  • 1 t. almond flovoring
  • 1-1/2 c. flour
  • 1 t. soda
  • 1. t. cream of tarter

Icing:

  • 2 T. butter
  • 1 t. almond extract
  • 2-3 c. powdered sugar
  • milk to create desired consistency
  • colored granular sugar
Directions:  In a large bowl, blend powdered sugar and butter.  Add egg and flavoring; mix thoroughly.  In another bowl, mix together flour, soda and cream of tarter.  Blend dry ingredients into sugar mixture.  Form dough into two balls.  Wrap in plastic and refrigerate for 2 to 3 hours. Roll out dough on a lightly floured surface.  Cut with cookie cutters.  Place on lightly greased baking sheet.  Bake at 375 degrees for 7 to 8 minutes until golden.  Cool before icing.To make icing, beat butter, extract and 1 c. powdered sugar with a mixer. Add milk to sugar to create a glaze. Use pastry brush to coat cookies with glaze then sprinkle with colored sugar.  Allow to dry thoroughly.  Cookies can be frozen until needed.

Overnight Coffee Cake
Ingredients:

  • 2/3 c. butter
  • 1 c. sugar
  • 1/2 c. packed brown sugar
  • 2 eggs
  • 1 c. buttermilk
  • 2 c. flour
  • 1 t. baking powder
  • 1 t. baking soda
  • 1 t. ground cinnamon
  • 1/2 t. salt

Topping:

  • 1/2 c. packed brown sugar
  • 1/2 c. chopped walnuts (optional)
  • 1/2 t. cinnamon
  • 1/2 t. nutmeg
Directions:Cream together butter, sugar, and 1/2 c. brown sugar until light and fluffy. Add eggs, one at a time.  beating well after each one.  Add dry ingredients alternately with buttermilk, beating well after each addition.  Spread batter in a greased and floured 9×13 inch pan.  Combine topping ingredients and mix well. Sprinkle over batter.  Refrigerate for 8 hours or overnight.  Bake at 350 degrees for 30 to 35 minutes or until done.  Serve warm.

Chicken Nacho Cheese Dip
Ingredients:

  • 4 c. cooked shredded chicken
  • 2 10 3/4-ox. cans cream of chicken soup
  • 1 can diced tomatoes with green chilies
  • 1/4 tsp pepper
  • 1/2 tsp garlic salt
  • 1 c. chopped onion
  • 1 lb. American processed cheese
  • 1 bag tortilla chips
Directions:Combine all ingredients except chips and place in a 13 x 9 baking dish.  Bake at 350 degrees for 30 minutes or until cheese is melted. Serve with chips.
